If you want something done right, sometimes you just have to do it yourself. To that end, a handful of establishments have developed their own locally made hot sauce, whether by design (Yank Sing's recipe has been in the family for generations) or happy accident (Maverick needed to use up some chilies and voilà). A few restaurants have gotten a little crazy from the heat: Papalote offered to sell its secret sala recipe for $300,000 (no takers yet), and the son of Memphis Minnie's proprietor tattooed the BeelzeBob pig from the bottle's logo on his leg. Mom was not pleased.
