People who go to bars looking for passion don’t expect to find it in a glass. But the passion-fruit caipirinha at À Côté, thick with the pulp of a fresh passion fruit along with its crunchy black seeds, is a head turner. A few sips into it, you realize it’s a head spinner, too. Made with 80-proof cachaça, the cane liquor that is to Brazil what tequila is to Mexico, the caipirinha is South America’s answer to the margarita. Bar manager Mike Moreno makes his with lime juice and sugar and tops it off with the fruit’s spent husk, which could be a metaphor for the evening ahead.
